Kombucha Tea is a tea brewed with the kombucha mushroom used as a starter culture. The tea contains glucuronic acid which helps the liver to regenerate and detoxify. It has an apple cider taste to it which can be quite tart the longer it is left in the brewing state. Below is the recipe we use to make the tea:
Boil 3 cups of water in a clean stainless steel pot (never aluminum), remove from heat and place the tea bags in the water and let set 15 minutes. Add the sugar and stir until sugar dissolves. Pour remaining water in glass container, then add above mixture. The container should be clear glass with no paint or glazing. These substances can leach out into the tea. Never use aluminum to cook with or store food in because the aluminum will leach into your food - even aluminum foil wrap. Add white vinegar and stir. Gently add kombucha mushroom. It will probably sink to the bottom, but will rise as brewing continues. Cover with one of the muslin cloths. Unused, clean, non folded cloth diapers are great for this project. Let set for 6-10 days in a dark cool place where it will not be disturbed. The longer it sets, the less sweet it will be, and the mushroom will have risen to the top. Test by inserting a straw into the brew and withdrawing a sample for taste. When ready, take out the mushroom culture and set aside for future use. The mushroom culture should be cut in half and use half for your next brew(s), or give one of your halves to a friend for their starter. Use the other muslin cloth to strain the tea. We use a ladle to pour from the container to quart jars. Let the jars of new tea set for 5 days, then refrigerate and you are ready to use.
